Audrey and Craig Ramini began with 5 water buffalo, a shoe string budget and a big dream. The first 4 years were spent building relationships with the buffalo and learning to make the cheese. They rented a small farm and pasture, renovated the dairy and designed a farmstead creamery. By 2012 they were successfully selling all the cheese they could produce.
Ramini now has 85 gentle giants that produce the highest quality milk and Audrey makes two artisan handcrafted batches a week to provide the freshest mozzarella and ricotta possible. Their products can be found at select grocery stores, restaurants and farmers markets.
