Audrey Hitchcock and Craig Ramini began with 5 water buffalo, a shoe string budget and a big dream. The first 4 years were spent building relationships with the buffalo and learning to make the cheese. They rented a small farm and pasture, renovated the dairy and designed a farmstead creamery. By 2012 they were successfully selling all the cheese they could produce. 

Ramini now has 110 gentle giants that produce the highest quality milk and Audrey makes two artisan handcrafted batches a week to provide the freshest mozzarella and ricotta possible. Their products can be found at select grocery stores, restaurants and farmers markets.

In 2022, her buffalo herd moved from Tomales to graze in Sonoma on Arnold Drive. Currently, she is NOT doing any tours with her animals. However, she hopes to be selling buffalo milk beginning this year.

In 2024, Audrey began making her cheese at the Wm. Cofield Cheesemaker creamery at The Barlow in Sebastopol. You can pick up Ramini Mozzarella there at the shop.
