Welcome to our annual Master Class series! We host these classes around the Fancy Food Show when our city is host to some of cheese's most respected producers, importers, and agers. Tonight we welcome Manuel Maia of Tradifoods. If you've heard of Portguese cheese, it's because of Manuel. In this class, he'll discuss thistle renneted cheeses. Common in Portugal, but much rarer elsewhere, these cheese have a unique place in the library of cheese. Note: this class offers two ticket types.
