Cheesemaking: Mozzarella and Burrata

Mozzarella on nearly every aspiring home cheesemakers to-do list. Yet, it’s not easy to get it right. Why won’t your curds form a ball? When you do get the ball to form, why is it hard enough for a game of hacky-sack? These are the mysteries of mozzarella. In this class, Khadijah Massoud will not only demystify the mozz, but also get you on the road to making perfect ovalini and bocconcini every time. But wait! There’s more! Triple Cremes and Bubbles

A seasonal favorite! There is no better time for triple-crème cheeses and sparkling wine than the holidays. Laura Werlin leads us through a winter wonderland of luscious, decadent cheeses, pairing each with a different delicious bubbly. The crème’s are good enough to have Jack Frost nipping at your cheese plate, and the Champers so effervescent that they could breathe life into Old Man Winter himself. Cheers! Truffles!

For some, the holidays mean indulging in cookies and fruitcake, for us they mean breaking open our little piggy bank and splurging. Truffles are worth their weight in gold. For the last 20+ holiday seasons, Juliana Uruburu, the general manager at Market Hall Foods has imported mountains of them, both the black and white varieties. Her loyal customers call weeks in advance to get their hands in the truffle jar. In this class, you’ll try Juliana’s bevy of truffled cheeses, honeys, oils, and more. Best Cheese and Wine of 2019

Cheeses of Italy 101

We all know Italy produces wonderful cheeses. But why is the variety so perplexingly wide? Why is mozzarella di bufala tart and a fior di latte mozzarella sweet? What accounts for the tenderness of a Pecorino Toscano and the brute forcefulness of a sheep's milk cheese from Sardinia? To fully understand the range of style and flavor of Italian cheese, one must understand the regional characteristics and culture. This class will provide a tasting tour of all the major cheese-producing regions of Italy. The cheeses will be paired with traditional wines and accompaniments that bring out the very best flavors of Italian cheese. Buon Gusto! Champagne! (And Cheese, of Course)

Few things symbolize the festivity of the holidays like champagne. While sparkling wine is made in many parts of the world, champagne is only produced in the namesake region of France using specific methods. But as with any region, there is still plenty of variation. In this class we’ll explore the array of flavors and learn about some of region’s best producers. And of course, we’ll pair this all with cheese. The tasting will be accompanied by a selection of champagne-loving cheeses and accompaniments that bring out the richness of flavor in each bubbly.
