Family Cheesemaking – Unicorn Cheese!

The magic of watching milk turn into curds and whey is an age-old thrill and this class is sure to inspire the science-loving chef in young and old alike. This class walks you through a fun history of cheesemaking, some cool facts about milk and how to turn it into two simple, tasty cheeses. We'll even color the cheese using simple foods.

Cheesemaking: Mozarella + Burrata

Mozzarella on nearly every aspiring home cheesemakers to-do list. Yet, it’s not easy to get it right. Why won’t your curds form a ball? When you do get the ball to form, why is it hard enough for a game of hacky-sack? These are the mysteries of mozzarella. In this class, Khadijah Massoud will not only demystify the mozz, but also get you on the road to making perfect ovalini and bocconcini every time. But wait! There’s more! Cheeses of Italy

We all know Italy produces wonderful cheeses. But why is the variety so perplexingly wide? Why is mozzarella di bufala tart and a fior di latte mozzarella sweet? What accounts for the tenderness of a Pecorino Toscano and the brute forcefulness of a sheep's milk cheese from Sardinia? To fully understand the range of style and flavor of Italian cheese, one must understand the regional characteristics and culture. This class will provide a tasting tour of all the major cheese-producing regions of Italy. The cheeses will be paired with traditional wines and accompaniments that bring out the very best flavors of Italian cheese. Buon Gusto! Tonight we welcome Manuel Maia of Tradifoods. If you've heard of Portguese cheese, it's because of Manuel. In this class, he'll discuss thistle renneted cheeses. Cheese Making Class and Farm Tour

Upon arrival you will roll up your sleeves, put on a hairnet and get your hands wet in a Vat full of curds and whey! You will learn how to use the equipment and see the cheese aging room before being treated to a full ranch tour that includes everything from the Milking parlor to the Loafing barn. There will be a cheese tasting before lunch.

Master Class: A Survey of Alpine and Alpine Style Cheeses with Anne Saxelby

Welcome to our annual Master Class series! We host these classes around the Fancy Food Show when our city is host to some of cheese's most respected producers, importers, and agers. Tonight we welcome Anne Saxelby of Saxelby Cheese in New York. Anne's little shop has had an enormous effect on the cheese scene of New York and is one of the industry's finest mongers and distributors. She's recently collaborated with the Cellars of Jasper Hill on an Alpine-style cheese coated in hay called Calderwood. Anne will survey the landscape of Alpine and Alpine-style cheeses from Europes highest peaks to the pastures of Wisconsin. Note: this class offers two ticket types. Farm Tour: Double 8 Dairy & Cowgirl Creamery

You'll hit the road with Jeanine Eagan and Julie Gordon. They'll set the stage with a brief history of dairy region, then whisk you away in their van for an intimate tour and taste at Double 8 Dairy, home to California's only water buffalo creamery. Next, you'll head to Cowgirl Creamery for a guided walk through their original location at Point Reyes Station with a tasting and talk specially designed for The Cheese School customers. Coffee on arrival, delicious lunch, and transportation to and from The Cheese School provided! Tours are limited to 13 guests.
