Shamrock is a family-owned, farmstead cheese producer, in business as a dairy since 1972 and a creamery since 1983.

Formerly known as the award-winning Carmel Valley Chevre, they now produce a soft chevre in seven flavors, Feta, Tome du Corbier, Ashed Tomette, Redwood Log, and Shamrock Bouchon.
