Cabrillo is a Spanish style cheese created from a blend of goat and cow milk named for the iconic Highway One that runs along the rugged California coastline minutes from the farmstead. Cabrillo is a cheese made predominantly in the fall as goats’ production wanes and their milk takes on a stronger character.
It has a rich, nutty, salty character, golden color.
Recommended pairings: Cut into wedges, grated/shaved for salads, or pair with almonds and figs. Perfect for a cheeseboard; all wines, especially white wine and Pinot.
Ingredients: Pasteurized milk; salt; cultures; rennet.
