Santa Rita is their newest creation. Made in the Trappist style, it is their youngest and softest cheese. Its unique aroma and flavor profiles develop during a minimum two-month aging process, in which each cheese is washed daily to cultivate its smear-rind (washed-rind), resulting in a beautifully red-hued, edible thin rind. Santa Rita isn't overpowering like some washed-rind cheeses; it begins subtly and pleasantly, then gives way to deep, beefy flavors enhanced by the aromatic rind.
