The Gabilan cheese is inspired by the Gabilan Mountains – along with the Santa Lucia Mountains – frame the bountiful Salinas Valley. This is a mountain cheese made from raw fresh milk. It is firm and durable, and evokes the Swiss Alps, to which the Schoch Family traces their roots. Enjoy this cheese during a hike, or sit down for a picnic and serve it with cured meats and local brews!
