Laychee is the Boontling term for milk and it is a fresh cheese that undergoes two days of acidification, but no ripening. This is milk which is transformed into cheese in just a matter of days, so is the first available cheese of each new spring. Laychee is only available during the ten months of the year when our animals produce milk.
