A six month California cow's milk cheese that is flavorful, yet approachable. The use of Alpine and adjunct cultures results in cheese that is nutty and sharp with a slightly fruity finish. The paste is dotted with eyes and it has a creamy texture with distinct tyrosine crystals. Winner of "Best of California" at the 2023 California State Cheese Competition.
