Based on the french Alpine tomme, this is a natural rind cheese aged for a minimum of 2 months, showcasing the milk's flavor. When young, a soft mild cheese, as it ages it becomes more complex and firmer. Enjoy anywhere from 2 months to 12 months old.
Tasting notes: Sweet and mild when young, maturing to a nutty, salty, crystal-ly flavor parade
Ways to enjoy: Charcuterie, sandwiches, melting, cooking with, rinds in the pasta sauce
Pairing: Belgian ale, saison, fruity reds like a zinfandel.
