Ramini Mozzarella resumes production of buffalo milk cheeses

Three years ago, Ramini Mozzarella faced a major setback, losing their creamery space and pasture for their prized water buffalo. Audrey Hitchcock has been tirelessly searching for a solution ever since, encountering numerous obstacles along the way. But this month, a beacon of hope emerged. Keith Adams of Wm. Cofield Cheesemakers stepped in to offer Audrey creamery space, enabling her to continue making her beloved fresh mozzarella and stracciatella.

Not all industries foster such a collaborative spirit, but the world of cheesemaking does. In Northern California, this camaraderie was inspired by Sue Conley and Peggy Smith, the cofounders of Cowgirl Creamery. Known for their generous mentorship, Sue and Peggy have always been ready to offer advice to new cheesemakers, helping them perfect their craft and later distributing their cheeses.
