Cheese & Wine of Italy

We all know Italy produces wonderful cheeses. But why is the variety so perplexingly wide? Why is mozzarella di bufala tart and a fior di latte mozzarella sweet? What accounts for the tenderness of a Pecorino Toscano and the brute forcefulness of a sheep's milk cheese from Sardinia? To fully understand the range of style and flavor of Italian cheese, one must understand the regional characteristics and culture. This class will provide a tasting tour of all the major cheese-producing regions of Italy. Led by Andy Lax of Fresca Italia, an importer and distributor that specializes in Italian cheeses, you'll taste the best and learn from a true expert. The cheeses will be paired with traditional wines and accompaniments that bring out the very best flavors of Italian cheese. Buon Gusto!

Summer Cheese and Charcuterie

You say salami, I say salumi. Come learn the difference between the two and meet Italy’s finest carnivorous creations. Cured meat expert Vanessa Chang will introduce you to a variety of American and Italian artisans. While cheese expert Michael Kalish will pair each meat with its perfect summer cheese. All the while you’ll learn principles for pairing meat and cheese and wash your education down with our favorite wine of summer, Prosecco.

Bring in ‘da Funk – Washed Rind Cheeses and Sour Beer

Washed rind, aka stinky cheese devotees will revel in this celebration of funk. The soft textures and meaty, yet subtly sweet flavors characteristic of these cheeses keep fans coming back for more. Similarly, while sour beers might make some folks pucker, these wild ales are at the forefront of beer connoisseurship. With their complex flavors and exceedingly refreshing quality these ferments on the fringe are spectacular candidates for pairing with cheese, especially the “aromatic” variety. In this class you’ll explore both the breadth of offerings from this style of brew and the cheeses that make their match. Certified cicerone and cheese expert Chris Munsey leads.
