Jollity Farm Goat Dairy Tour

Jollity Farm is a small farmstead goat dairy. Our farm tours are conducted by the owner/cheesemaker, so you will get to see and ask questions about both the livestock side of the operation and the cheese making. See our milking parlor, our goat barn, and peek in to our creamery. Your tour will end with a sampling of cheese.

Cheese Meets Chardonnay

You’ve probably heard sommeliers say that cheese pairs best with white wine. That theory will be tested with both young and aged Chardonnays from Trefethen Family Vineyards, a Napa Valley winery famous for them. Trefethen has promised to reach into its collection of prized older vintages—Chardonnays acclaimed by critics for aging gracefully. And Janet Fletcher, your guide, has just the cheeses for them!

Italianissimo!

From the Italian Alps to Sicily’s sheep farms, Italy is cheese country. Seems like every little village has its own pecorino or robiola or cave-aged blue. We’ll meander the back roads of the Italian “boot” tonight, tasting small-production cheeses that I bet you don’t know, and some superior versions of the classics. The country that gave us Parmigiano-Reggiano has so many more cheeses to love.

Blended Beauties: Cow, Goat, Sheep

Cow’s milk is buttery. Goat’s milk is tangy. Sheep’s milk is thick and rich. Working with more than one type of milk allows a cheesemaker to get creative and develop signature recipes that resemble no one else’s. Like some wines, the best mixed-milk cheeses achieve complexity through blending. Tonight, we’ll taste some stellar examples of two-milk and three-milk blends from the U.S. and beyond and see if we can detect the contribution of each milk type.
