Sure you know the big guys: mozzarella, taleggio, gorgonzola. But what about the unique, small-production gems only found in Italy? Cheese author Janet Fletcher will seek out the frontier of Italian cheesemaking, the little known flavor kings of fromaggi from the top of the boot to the bottom.

Cheese & Wine 101

Pairing cheese and wine to bring out the best takes a little bit of science and a lot of experience. When you get it right, you know: the combination elevates what is already delicious into an experience that is truly transcendent. Get it wrong, and what should be a great cheese or wine falls flat (or worse.) In this class you'll learn some general guidelines that will help you get it right more often than wrong, and tasting tips that will help you identify your own personal favorites.

Cheese + Beer 101

We all know the legendary bond that wine and cheese have in our minds, but have you ever sat down and really tasted beer and cheese together? If not, you should! Beer and cheese have a long history as mates, dating back to northern European monasteries of the middle ages, but only in the last decade has this trend found America. At this event, we'll be pairing five domestic cheeses with five local craft beers, and exploring the rainbow of flavor combinations that result. After all, why does wine get to have all the fun?

Afterwork Cheesemaking: Cheddar

Cheddar. For many of us, it’s the first cheese we taste. To this day, it’s all but impossible to turn down a hunk of this tangy, savory, robust delight. In this class, you’ll learn to make your own, taste the freshly made curd, then take your wee block home to continue aging under your gentle care.
