Pairing cheese and wine to bring out the best takes a little bit of science and a lot of experience. Master Class Past and Present Mons PDO Cheese

In the 1950s Hubert Mons worked as a delivery driver and trucked food across the whole of France. With the knowledge accrued from such travel and an eye for farms worth stopping off at for lunch, Hubert decided to go into business for himself. In the early 60s he began to source artisanal cheeses from his native region of Auvergne and with his wife, sold them at local markets. Join us as Sue Sturhman introduces you to the world of PDO cheeses from one of the great French affineurs. Note: this class offers two ticket types. Afterwork: Mozzarella and Burrata Making

Mozzarella on nearly every aspiring home-cheesemaker’s to-do list. Yet, it’s not easy to get it right. Why won’t your curds form a ball? When you do get the ball to form, why is it hard enough for a game of hacky-sack? These are the mysteries of mozzarella. In this class, Kirstin Jackson, will not only demystify the mozz, but also get you on the road to making perfect ovalini and bocconcini every time. But wait! There’s more! We’ll use our curds to make everyone’s favorite cheese, burrata.
