Truffles!

For some, the holidays mean indulging in cookies and fruitcake, for us they mean breaking open our little piggy bank and splurging. Truffles are worth their weight in gold. For the last 20+ holiday seasons, Juliana Uruburu, the general manager at Market Hall Foods has imported mountains of them, both the black and white varieties. Her loyal customers call weeks in advance to get their hands in the truffle jar. In this class, you’ll try Juliana’s bevy of truffled cheeses, honeys, oils, and more. She’ll share her favorite recipes and show you a dozen ways to serve the most fabulous fungi known to man.

Champagne + Cheese!

Few things symbolize the festivity of the holidays like champagne. While sparkling wine is made in many parts of the world, champagne is only produced in the namesake region of France using specific methods. But as with any region, there is still plenty of variation. In this class we’ll explore the array of flavors and learn about some of region’s best producers. And of course, we’ll pair this all with cheese. The tasting will be accompanied by a selection of champagne-loving cheeses and accompaniments that bring out the richness of flavor in each bubbly.

Cheesemaking: Camembert

Your ovalini are moist and perfectly round. Your chevre is fluffy and tangy. Now you’re ready for your next challenge: Camembert. In this class, you’ll learn how to make the French classic (with a twist) from author Kirstin Jackson. Kirstin will lead you in inoculating fresh milk, recognizing when the curd has set, then layering the curd in the form. Over the next month you’ll take your little cheese home and watch it grow fluffy and white as you care for it.

Hands on Cheesemaking Class

Cheesemaker Sheana Davis breaks down the barriers to cheesemaking, making it accessible, easy and fun with energetic, hands-on classes that teach participants how to craft a fresh, warm ricotta cheese that is ready to serve and enjoy within 90 minutes. Upon arrival, guests are welcomed with locally crafted wine and artisanal cheeses.

Afterwork Cheesemaking: Gouda

Your mozzarella are moist and perfectly round. Your chevre is fluffy and tangy. Now you’re ready for your next challenge: Gouda. In this class, you’ll learn how to make the Dutch classic (with a twist) from cheesemaker Sacha Laurin. Sacha will lead you through the process step by step, from innoculating the milk to ladling your fresh curds into molds. You'll take your little gouda home to and age it to perfection in the comfort of your own kitchen.

Cheesemaking: Mozzarella + Burrata

Mozzarella on nearly every aspiring home-cheesemaker’s to-do list. Yet, it’s not easy to get it right. Why won’t your curds form a ball? When you do get the ball to form, why is it hard enough for a game of hacky-sack? These are the mysteries of mozzarella. In this class, Kirstin Jackson, author and home cheesemaker, will not only demystify the mozz, but also get you on the road to making perfect ovalini and bocconcini every time. But wait! There’s more! We’ll use our curds to make everyone’s favorite cheese, burrata.

Holiday Pizza Making

The perfect pizza: a crust that's crispy yet chewy; thin yet strong enough to hold toppings. While the pizza is a simple food, its subtleties can mean the difference between a soggy Frisbee and a Platonic circle of perfection.
