Cheese 101

The first step in your 'everything you always wanted to know about cheese, but were afraid to ask' education. In this class you'll taste, listen, and ask your way through the basics of what cheese is, how and where it's made and how it's classified. Above all you'll learn key tasting skills that will enhance your appreciation of cheese for the rest of your life. In cheese as in life, a little knowledge goes a long way.

Family Cheesemaking Workshop

For children 7-14 and their families. The magic of watching milk turn into curds and whey right before your eyes is an age-old thrill and this class is sure to inspire the science-loving chef in young and old alike. This one and a half-hour class walks you through a fun history of cheesemaking, some cool facts about milk and how to turn it into two different tasty cheeses that are ready in no time at all. We'll even take some time to learn how to color the cheese in fun ways using food. Part 1: Each small group of students starts with their own gallon of milk and coaxes it over the course of the class into delightfully fluffy ricotta.  Part 2: Watch the process of making fresh goat cheese at home in a time-lapse format then wander around the room mixing the cheese with a variety of delectable treats from chocolate to fruits and herbs. No two combinations taste the same and kids will get a kick out of creating their own unique flavor combinations. We'll provide fun, kid-friendly beverages and all the entertainment you can stand in this dynamic hands-on class. This workshop is taught by Nicole Easterday, the founder of FARMcurious. Nicole is an engaging teacher who encourages a fun, interactive environment while she explains what’s happening in a very down-to-earth, kid- and adult-friendly format. Attendees will leave this class with:

  • A new appreciation for the magic that is cheese
  • Confidence and knowledge to reproduce the same results at home.
  • Handouts including recipes, frequently asked questions, fun facts and resources.
  • Delicious, versatile whey we produce while making the cheese (don't worry, we'll explain how to use it - you can't wait, check out this blog post).
This class is only available children (ages 7-14) accompanied by an adult and adults accompanied by a child (ages 7-14). No more than two children per adult, please.

American Classics: From Cheese to Shining Cheese

Not subject to the regulations and tradition of Europe, American cheesemakers have developed new flavor profiles and mash-up cheese recipes that can only be described as "American Originals." But what takes cheeses from being a passing fad to becoming an American classic? Author and turophile Janet Fletcher will take you on a cross-country trip to showcase those American cheeses that stand the test of time and continue to delight palates from coast to coast.

      Cheese Lover Tour

      Looking for that once in a lifetime cheese making experience? This class is for you! Upon arrival you will roll up your sleeves, put on a hairnet and get your hands wet in a Vat full of curds and whey! You will learn how to use the equipment and see the cheese aging room before being treated to a full ranch tour that includes everything from the Milking parlor to the Loafing barn. Naturally there will be plenty of cheese tasting before lunch in our family party room.
