Toluma Farms Tour

Find out about the history of how this goat/sheep dairy and creamery came to be. Tours include a tour and explanation of the milking parlor, a visit with the animals in the barn and/or pastures, a hike up to the pastures to learn about their organic pasture management system, a peek into the creamery with an explanation of how their cheese is made, and of course cheese tasting! Truffles!

For some, the holidays mean indulging in cookies and fruitcake, for us they mean breaking open our little piggy bank and splurging. Truffles are worth their weight in gold. For the last 20+ holiday seasons, Juliana Uruburu, the general manager at Market Hall Foods has imported mountains of them, both the black and white varieties. Her loyal customers call weeks in advance to get their hands in the truffle jar. In this class, you’ll try Juliana’s bevy of truffled cheeses, honeys, oils, and more. She’ll share her favorite recipes and show you a dozen ways to serve the most fabulous fungi known to man.

Cheesemaking: Camembert

Your ovalini are moist and perfectly round. Your chevre is fluffy and tangy. Now you’re ready for your next challenge: Camembert. In this class, you’ll learn how to make the French classic (with a twist) from author Kirstin Jackson. Kirstin will lead you in inoculating fresh milk, recognizing when the curd has set, then layering the curd in the form. Over the next month you’ll take your little cheese home and watch it grow fluffy and white as you care for it. We’ll keep in touch via Facebook to see how our camembert ripen!

Best Cheeses of 2017

While sparkling wine is made in many parts of the world, champagne is only produced in the namesake region of France using specific methods. But as with any region, there is still plenty of variation. In this class we’ll explore the array of flavors and learn about some of region’s best producers.
