Point Reyes Farmstead Farm Tour

Every Friday, May-October, from 1:30-3pm -- join a walking farm tour and a casual cheese tasting. Come a little early to enjoy a housemade ice cream sandwich on the patio and stroll around the edible garden.
 
DESCRIPTION: 
On the walking farm tour you'll learn the history of our farm and agriculture in the region, the life cycle (from birth) of a closed-herd of Holsteins, what Farmstead means and why it's important how artisan cheese is made. Back on The Fork patio, you'll enjoy a sampling of our cheeses and have the option to visit the retail cart before you depart. Arrive a little early to enjoy The Fork’s house-made ice cream sandwiches as you stroll through our edible garden and take photos with the baby calves.

Toluma Farms Tour

Cheesemaking: Ricotta & Queso Fresco

A hands-on cheesemaking course, with snacks and accompaniments to round out a light meal served with wine and beer.  With a few cheesemaker tricks, ricotta and queso fresco are two of the easiest and friendliest cheeses to make at home. Plus, they are well suited for summer parties! In this class, cheesemaking teacher and It’s Not You, It’s Brie book author Kirstin Jackson will show you how to make both cheeses, then craft two easy recipes with the cheese you just made fit to serve at your next summer party. A classic on Tuscan and Sicilian tables, ricotta is one of the most beloved cheeses in Italy. It’s rich, fluffy, and the perfect filler for gnocchi and lemon cheesecake, or served drizzled with olive oil. Crumbly queso fresco is the favored cheese of Latin America. Sprinkled over carnitas and salads, stuffed into chiles, or paired with quince and guava paste, “fresh cheese” is a versatile and adored staple.  The class will start with a tasting of two of the best ricottas and queso frescos. Then we’ll talk cheese culture and science while making our own milky and crumbly queso fresco (one with chopped cilantro), and whole-milk (and cream!) ricotta. Then we’ll transform our cheese into two simple dishes— summer peach and basil ricotta crostini, and seared queso fresco salad with herb and olive vinaigrette— and sit down together to eat.

      Farm Tour of Marin Cheesemakers

      The Cheese School is heading for the hills! The hills of Marin that is. On our popular farm tour series you’ll meet Marin native, culinary expert, and tour leader Elizabeth Hill in Point Reyes Station. Elizabeth will set the stage with a history of West Marin, then whisk you away in her van for an intimate tour and tasting at Cowgirl Creamery. You’ll picnic on local delights after a tour and tasting at the beautiful Tomales Farmstead Cheese Company. Finally, you’ll head to the remarkable Double 8 Dairy, makers of water buffalo milk ice cream and cheese. Three local cheesemakers, one local food expert, and lots of tasty education.

      Cheesemaking: Mozzarella and Burrata

      Mozzarella on nearly every aspiring home-cheesemaker’s to-do list. Yet, it’s not easy to get it right. Why won’t your curds form a ball? When you do get the ball to form, why is it hard enough for a game of hacky-sack? These are the mysteries of mozzarella. In this class, your instructor, who is also a cheesemaker, will not only demystify the mozz, but also get you on the road to making perfect ovalini and bocconcini just in time for all that wonderful summer produce. But wait! There’s more! We’ll use our curds to make everyone’s favorite cheese, burrata.
