Italy vs. France

The two biggest names in cheese face-off in a savory showdown. France and Italy each produce over 400 cheeses. Both are heavily influenced by a millennium of tradition. But one taste will lay bare the differences between cheese styles, cheesemaking approaches, and their particular histories. In this class you’ll learn how these countries’ cheesemaking traditions differ, how they came to be cheesemaking greats, and just how much deliciousness can come from this diversity.

Cheese & Beer 101

Cheese and beer: These new-found friends in fermentation are all the rage in foodie circles. Why? Because while some cheese and wine pairings can set off fireworks, many are duds. Beer is easier to pair with cheese, a more forgiving medium in which to taste the subtleties of dairy. Cheese and beer nut Chris Munsey will lead you in an introduction to the lovely couple.

Garden Variety Cheese Open House

Head to the farm for a spring open house! Meet the dairy flock and see how and where Garden Variety Cheese is produced. There will be tours of the dairy and cheesemaking facilities. There will be lots of baby lambs to pet and piglets to feed. You are welcome to bring a picnic or there will be food for sale, all with meat from the farm. Beer from Santa Cruz Mountain Brewing and wine from Odonato Winery will also be available. In addition you can learn about the Adopt-A-Ewe program, taste Garden Variety aged cheeses, and bring home some whey-fed pork.  Meat, eggs and cheese will be for sale so bring a cooler. Toluma Farms Tour

Find out about the history of how this goat/sheep dairy and creamery came to be. Tours include a tour and explanation of the milking parlor, a visit with the animals in the barn and/or pastures, a hike up to the pastures to learn about their organic pasture management system, a peek into the creamery with an explanation of how their cheese is made, and of course cheese tasting! Private tours are available for groups of 10 or more. Toluma Farms goat

Cheese & Wine Pairing 101

Pairing cheese and wine to bring out the best takes a little bit of science and a lot of experience. When you get it right, you know: the combination elevates what is already delicious into an experience that is truly transcendent. Get it wrong, and what should be a great cheese or wine falls flat (or worse.) In this class you'll learn some general guidelines that will help you get it right more often than wrong, and tasting tips that will help you identify your own personal favorites.

    East Coast vs. West Coast Cheese

    Cheese and Wine of Northern Italy

    Robiola, Taleggio, Gorgonzola, Grana Padano: These are just a few of the famous cheeses that trace their roots to Lombardy and Piedmont. In the mountains of Northern Italy, these provinces are rich in both finance and formaggi. You can taste the wealth that this bountiful and diverse area generates. Let cheese importer, and Northern Italian specialist, Andy Lax, guide you through a tasting of his favorite Lombardian and Piedmontese cheeses.     Spring Fling: Fresh and First of the Season Cheeses

    Come May, foodie hearts’ swoon at the first sights and flavors of Spring. Few of the new year’s pleasures are greeted with as much joy as the wobbly legs and little baa’s of baby goats and lambs.     Cheeses of France
