Toluma Farms Tour

Find out about the history of how this goat/sheep dairy and creamery came to be. Tours include a tour and explanation of the milking parlor, a visit with the animals in the barn and/or pastures, a hike up to the pastures to learn about their organic pasture management system, a peek into the creamery with an explanation of how their cheese is made, and of course cheese tasting! Sugar Loves Mold

Salted caramels, prosciutto and melon, bacon and...everything: The counterbalance of salty and sweet has gone from food trend to gospel in less than a decade. That’s part of why cheese pairs so divinely with honey, jams, and dried fruit. The other reason? Mold! (Think Brie, blue cheese, funky washed rinds, and wrinkly-rinded goat cheeses.) In this class you’ll pair cheeses with different molds with the sweet treats that make each cheese sing. Led by cheese expert and the woman who coined the phrase, “sugar loves mold” Juliana Uruburu.

Basic Cheesemaking

Fromage blanc, creme fraiche, and feta are the cheeses that make appetizers and main courses sing. Cheeses of France

Don't knock the French for sometimes acting like the world revolves around them. In the case of cheese, they're right. France is undeniably the historic and cultural epicenter of all things fromage. More than most of us can imagine, the French value their culinary patrimony. So much so that the government puts forth an extraordinary effort to preserve its historic food treasures -- for us to enjoy, here in San Francisco. This class will cover the age-old grand dames, small production treasures, and extraordinary everyday wheels that put the 'ooh-la-la' in French cuisine.

This class will teach you how to transform fresh milk into a personal wheel of ageable, lovable Gouda. Learn about milk chemistry, culture options and ways to salt and press.     Cheese and Wine of Southern Italy

    While many of southern Italy’s cheeses are characteristically rustic and robust, let’s not forgot that this is also the region that blessed the world with burrata. In this class, you’ll experience bounty of flavors produced in the sultry southern provinces of Italy. Bi-Rite’s Cheese Buyer Jon Fancey will select his favorite finds from Italy while Mister Jiu’s Wine Director John Herbstritt will introduce you to the wines of southern Italy that are finally getting their dues.

    Made in America

    Not subject to the regulations and tradition of Europe, American cheesemakers have developed new flavor profiles and mash-up cheese recipes that can only be called, “American Originals.” So if you’re still hung up on France and Italy, allow artisan cheese authority and James Beard award-winning author Laura Werlin to introduce you to the exciting cheeses coming from the likely and less likely parts of our vast nation.     Cheeses of Spain and Portugal

    Iberian cuisine seems to be new again these days, but the cuisine draws on traditions as old and venerable as those of France and Italy. From the Basque and Pyrénées regions in the north and the green mountain ranges of Portugal to the sun-kissed coast of the Mediterranean, Iberian dairy farmers (lecheros in Spanish) have been producing wonderful cow, sheep, and goat’s milk cheeses for centuries, with wine to match. You’ll traverse the mountain tops and drink from the oaken barrels with instructor Juliana Uruburu.
