Toluma Farms Tour

Find out about the history of how this goat/sheep dairy and creamery came to be. Tours include a tour and explanation of the milking parlor, a visit with the animals in the barn and/or pastures, a hike up to the pastures to learn about their organic pasture management system, a peek into the creamery with an explanation of how their cheese is made, and of course cheese tasting! Private tours are available for groups of 10 or more. Toluma Farms goat

Cheese and Wine 101

Pairing cheese and wine to bring out the best takes a little bit of science and a lot of experience. When you get it right, you know: the combination elevates what is already delicious into an experience that is truly transcendent. Get it wrong, and what should be a great cheese or wine falls flat (or worse.) In this class you'll learn some general guidelines that will help you get it right more often than wrong, and tasting tips that will help you identify your own personal favorites.

Cheesemaking: Mozzarella and Burrata

Mozzarella on nearly every aspiring home-cheesemaker’s to-do list. Yet, it’s not easy to get it right. Why won’t your curds form a ball? When you do get the ball to form, why is it hard enough for a game of hacky-sack? These are the mysteries of mozzarella. In this class, your instructor, who is also a cheesemaker, will not only demystify the mozz, but also get you on the road to making perfect ovalini and bocconcini just in time for all that wonderful summer produce. But wait! There’s more! We’ll use our curds to make everyone’s favorite cheese, burrata.

Mooove Over: Goat, Sheep and Buffalo

Chevre, Manchego, mozzarella di bufala. Some of our favorite cheeses are made from a milk other than cow’s. Each milk type infuses a cheese with distinct flavors and textures. In this class you’ll taste an array of fresh, soft-ripened, aged, washed, and blue cheeses of sheep, goat, and water buffalo milk and learn what differentiates one from another.

What Grows Together, Goes Together: Terroir of Wine and Cheese

It’s said what grows together, goes together. Meaning, shared weather, soil, community, and history over time give life to unique foods and beverages within a specific geography. While the concept of terroir may be debated, there is no doubt that cheese and wine have commingled for decades, even centuries. In this class you’ll learn about the common terroir to some of history’s greatest neighbors. You’ll taste age old pairings from Italy, France, and Spain and decide for yourself if they stand the test of time. Bring your favorite neighbor!

Master Class: The Enthusiast’s Guide to Cheese Science

Milk may seem bland and mundane, but this seemingly simple substance is responsible for the infinite aromatic complexity of cheese. This session explores the drivers of quality and variation in milk and cheesemaking that set the stage for the 'biochemical cascade of flavor' during ripening. Though even flavor chemists find the subject of cheese aroma daunting, Zoe aims to keep the material accessible and focused on exciting research that is shedding new light on this 9,000 year old mystery.

DZTA Presentation: Microbial State of the Union

DZTA recipient Tom Perry delivers his ACS talk here at The Cheese School. He’ll delve into the world of cultures, our microscopic partners in cheesemaking. He will talk about the history of their development on a commercial basis with a look into the primary families of culturing bacteria. You’ll also learn how countries like France, Switzerland and the United Kingdom have cultivated their microbiological patrimony and how we can foster ours here in the United States. All proceeds benefit the Daphne Zeppos Teaching Awards.
